It says you can't get back into S mode again when you have done this. Will this cause problems for me moving forward do you know?

This won't cause any problem but S mode gives you a better security.

To summarize:

Pro: It theoretically protects you from doing bad things like downloading and installing junk from unknown sources because you can only install apps from the Microsoft store.
